Sesame Seared Tuna |
Ingredients:
- Vegetable oil, as needed
- 12 tuna fillets (8-10 ounces each)
- Toasted sesame seeds
Marinade:
- 2 cups orange juice
- 1 cup teriyaki marinade sauce
- 1 cup soy sauce
- 12 limes, juiced
- 4 teaspoons chopped ginger
- 4 teaspoons chopped garlic
Preparation:
- Mix all marinade ingredients and divide into four 16-ounce containers. Marinate 3 to 4 fillets per container,
for 15 minutes before cooking. For each serving to order: Heat oil in large skillet over high heat.
Coat tuna fillet in toasted sesame seeds and sear on both sides 2 to 3 minutes. Meanwhile reduce some reserved
marinade by half to a thin glaze consistency. Plate fillet with 1 ounce pink pickled ginger and accompany
with a ramekin of reduced sauce, a lemon wedge and watercress or parsley.
