Prešporský Guláš (Slovak Goulash With Pickles and Fresh Horseradish) |
Ingredients:
- 4 lbs white onion, peeled and chopped
- 1 tsp caraway seeds
- 3 tbsp butter
- 3 tbsp vegetable oil
- 4 lbs stew beef or horse meat, cut into bite-size pieces
- 2 tbsp wine vinegar
- Salt
- 1 tsp freshly ground black pepper
- 2 tbsp sweet Hungarian paprika
- 1 tbsp hot Hungarian paprika
- 3 tbsp tomato paste
- For garnish: finely chopped onion and freshly grated horseradish
Preparation:
- In a large saucepan, melt butter and vegetable oil and briefly sauté onion and caraway seeds until onions are translucent.
- Add meat and vinegar. Reduce heat, cover and simmer for 2 hours. Ensure the meat is cooking in its own juices and is not
sticking to the bottom of the pan.
- When meat is soft, season with salt, ground pepper and paprika. Add tomato paste, stir well and continue to cok for 5 minutes.
Do not add any water.
- Arrange in deep plates and garnish with finely chopped onion and grated horseradish.
Serve with boiled potatoes, pickled sweet-and-sour cucumbers, and fresh crusty bread roll or baguette.
