Classic New Mexico Red Chili Sauce |
RED CHILI FROM POWDER
Ingredients:
- 1/2 cup New Mexico red chile powder (suit your palate)
- 1/2 cup vegetable oil
- 1/2 cup onion, finely chopped
- 1 garlic clove, minced
- 1 cup canned crushed tomatoes
- 3 tbsp honey
- 1 tsp cumin, ground
- 1/4 tsp black pepper
- One 14 1/2-ounce can vegetable broth
Preparation:
- Heat oil in a large saucepan over medium-high heat. Add onion; sauté 4 minutes.
- Add chile powder and garlic; sauté 1 minute.
- Stir in tomatoes and remaining ingredients. Bring to a boil; reduce heat, and simmer 10 minutes.
RED CHILI FROM PODS
Ingredients:
- 25 New Mexico Red Chile pods
- 1 bay leaf
- 1/2 tsp cumin, ground
- 1 tsp oregano, crushed
- 2 tsp garlic, granulated
- 2 tsp salt or granulated chicken bouillon
- 1 tsp flour
- 1 tsp vegetable oil
Preparation:
- Rinse the pods and remove the stems and seeds. In a pot, add enough water to fully cover pods.
- Add 1 bay leaf. Bring to a boil and simmer for 20 minutes, then let cool slightly.
- Remove bay leaf. In a blender, purée the pods and the water.
- Use a colander to separate the pulp from the skin. Repeat this several cups at a time.
- Add the cumin, oregano, garlic and salt.
- Thicken the sauce with a roux. Dissolve the flour in the oil and fry of 2 minutes while stirring constantly.
- Add the roux to the sauce.
