icon Broiled Scallops With Vermouth Sauce

Broiled scallops can be made in a wide variety of ways: raw or crusted in bread crumbs, ground pepper or parmesan, and topped with honey-lime marinade, lemon-parsley sauce, wrapped in bacon, wrapped in Italian prosciutto, etc. Here is a simple and quick, but elegant and very tasty recipe with a sweet vermouth sauce. It makes a great snack or starter, which we have been making for many years for our friends or just for ourselves.

Ingredients:

  • 1 1/2 lb scallops
  • 1/2 cup dry vermouth
  • 1/2 cup olive oil
  • 1/2 tsp finely chopped garlic
  • 1/2 tsp salt
  • 2 tsp minced parsley

Preparation:

  1. Marinate the scallops in the vermouth mixed with the remaining ingredients several hours in the refrigerator.
  2. Preheat the broiler. When ready to serve, place the scallops and the marinade in a shallow pan, place in the broiler about 2 inches from the source of heat and broil 5 to 6 minutes, turning once.
